Our Story

Senor Taco started in San Diego over thirty years ago at a placed called Cotija’s Mexican Grill. That’s the restaurant David Ruiz opened in order to give Southern Californians a taste of the authentic Mexican food he grew up with. He took his time to make sure that the recipes he used and the ingredients he selected stayed true to his roots. It wasn’t easy because creating these dishes takes time and begins early in the morning. But Cotija’s was a big success and it became world-renown for its spectacular shrimp burrito. In addition to launching Southern California’s first authentic Mex restaurant, David inspired his son Reynaldo to bring the same traditional, Mexican fare to California. Twenty years later Rey opened Senor Taco in Fountain Hills to the same kind of accolades his father received on San Diego. Today the Cojita spirit thrives in the Arizona desert. In the thirteen Senor Taco restaurants located in the Phoenix area, diners are treated to the same family commitment to fresh ingredients and authentic homemade Mex that David Ruiz still delivers every day to a loyal San Diego following. Senor Taco offers the same authentic Mex, the same outstanding dishes, and signature salsa bar. All made fresh, every day.
